Day Off

It was a beautiful day to be off from work, sunny and in the 60′s.

I slept a little later than normal, which was a luxury.

I had the remainder of the A Really Good Pancake Recipe  I made the other day, but because I did not have any pumpkin in the house so I used banana.

I battled the grand opening of a new Market Basket grocery store in our area with my mom, boy was that crazy.

I relaxed a bit with a little DVR catch up and reading the Nicholas Sparks new book, Safe Haven. 

I was able to get an A.R.T. appointment last minute for my locked up ankle and foot which now feels like new again, thank you Dr. Moore!

I played with my baby girl, Noah who was so happy to have us home today.

I tried a new recipe for dinner, Snobby Joes.

Ingredients

1 cup uncooked lentils
4 cups water
1 tablespoon olive oil
1 medium yellow onion, diced small
1 green pepper, diced small
2 cloves garlic, minced
3 Tablespoons chili powder
2 teaspoons oregano
1 teaspoon salt
8 oz can tomato sauce
1/4 cup tomato paste
3 tablespoons maple syrup
1 tablespoon yellow mustard (wet mustard)

My lentils turned a bit mushy but for this recipe it worked well.  I decided to forgo  a bun and put the Snobby Joes over a sweet potato with a side of acorn squash and veggies. 

Ok, so it wasn’t the most productive of days.  I did not find a cure for cancer, stop any wars or solve life’s greatest mysteries but it was a good day.  I spent time with family, relaxed and recharged the batteries so that I can continue to live a life to glorify God even in the little things.
